Fermented in a ceramic egg and left on lees for ten months. The nose shows apple skin, some marzipan/clove spice and floral bath salts. On the palate the wine is quite sinewy with plenty of tension without piercing or taut acidity, rather soft and sherbetty, relying on phenolics rather than acid to provide the structure.
